The Mumbai is the capital of Maharashtra where you can see lot of delicious dish from the country. Maharashtrian Paneer Kolhapuri is one of the special dishes from Mumbai cuisine and it is very simple to make it home. The additional positive thing you can get accurate taste though you prepare in home. It is very comfortable and you can prepare the dish in very short duration.
Ingredients required
· One tbsp of oil, one tbsp of oil for frying onion, one tbsp oil for shallow frying paneer
· 250 grams of paneer
· One cup of warm water
· 400 grams of blanched & pureed tomatoes
· 200 grams of chopped onion into julienne
· 6 whole dry red kashmiri chilies/ spicy red dry chilies
· Two tbsp of coriander seed
· 2.5 tbsp of desiccated coconut
· One tbsp of fennel seed
· 1.5 tbsp of cumin seed, one tbsp for cumin seed used for tempering curry
· Four stone flower
· Five green cardamom
· Two tbsp of poppy
· 6 - 7 peanuts
· Nutmeg powder, a pinch
· 2.5 tbsp of ginger garlic paste
· One tbsp of turmeric powder
· One tbsp Kashmiri red chili powder
· One cup of water
· One t/s of mustard seed
· One tbsp of goda masala
· One t/s of garam masala
· Salt as per your taste
· ½ cup of coriander leaves, chopped
Preparation direction
1. First step is you need to fry the sliced panner in small amount of oil and then put it into the warm water and keep it aside for some time. If you see it become soft then you can take it out and dried.
2. Take a pan pour very littile amount of oil and put the onion along with that add sugar and salt. It will help the onion to sauté quickly, then grind it and keep it aside. Likewise grind the tomatoes and keep it separately.
3. Now n a fresh pan add some oil, consecutively add the mustard seeds, funnel seed and cloves (if needed) then add the ginger garlic paste fry it until its green smell went off.
4. Then add the grinded mixture (that is roasted dried coconut, coriander seeds, funnel sees, red chilies, and cloves in oil) on the pan.
5. If it turns color then add puree of onion and tomatoes allow it to cook for 15 to 20 minutes, and then add red chilli powder, garam masala, goda masala and turmeric powder on it.
6. If it reaches the boiling stage then add some curd (optional) along with add the paneer in it and cook for 3 minutes then off the stove and serve it hot!!
