I have visited my friend’s home last week; my friend is expert in cooking. I have tasted a common recipe with ultimate taste in her cooking. It is nothing but Vazhakka Mezhukupuratti. She had some secret in his recipe and shared me. I too want to share it to you. Really it is very easy and simple recipe that you can prepare in 20 minutes. Ingredients required and preparation directions are listed here.
Ingredients required
· Raw Plantain - 2 big
· Turmeric Powder - 1/4 tsp
· Minced/Crushed Garlic - 4 cloves
· Red Chilly Flakes -1 tsp
· Red Chilly Powder -1/2 tsp
· Black Pepper Powder -1/4 tsp
· Diced Shallots -5 (Kunjulli)
· Curry Leaves - one sprig
· Coconut Oil - ½ tbsp
· Mustard Seeds - ¼ tsp
· Salt as per your taste
Preparation direction
1. Dice raw plantain into small cubes like and soak it in water for few minutes.
2. Again boil it in water along with ¼ tsp of turmeric powder and salt. Approximately you can cook for 8 minutes. Drain water and keep it aside.
3. Heat one tbsp of oil and append splutter, sauté shallots, garlic and curry leave. Fry it until the shallots become light brown color.
4. Now add the plantain into it, then add ½ tsp of chilli powder, red chilly flakes and adjust the salt.
5. Fry it until edges become light brown color then add some pepper powder and toss it. At last add some coconut oil and serve it hot.
