Andhra Pradesh is the state which is meant for spiciness and people can get more in all tastes. There are numerous dishes are prepared in Andhra cuisine where you can see about Kothimeera Atukulu in this special site. It is very simple to prepare this and it is prepared in 25 minutes.
Ingredients required
· Two cups of poha, (beaten rice)
· 1/4 teaspoon of turmeric powder
· Salt as per your taste
· 1/3 cup of fresh and grated coconut
· Two Green chillies
· 3/4 cup of fresh and chopped Coriander leaves
· 1 1/2 teaspoon of lemon juice
· 1/2 tsp of rasam powder - (homemade is preferable)
· 1 teaspoon of grated jiggery/ sugar
· 1/2 teaspoon of mustard seeds
· One teaspoon of urad dal
· 1/2" of cinnamon stick
· Asafoetida, a small pinch
· One spring of Curry leaves
· 1 1/2 tbsps if oil
Preparation methods
1. Wash the beaten rice and drain it well, sprinkle some water over it four tto five tablespoon of water over it and keep it aside.
2. Now grind the fresh coconut, cilantro, green chillies, jiggery, lemon juice, rasam powder, salt. Grind it in paste form with the addition of water three table spoons.
3. Now mix the grounded mixture with the washed pogh and kept undisturbed.
4. Heat the oil in a pan add some mustard and allow it to seethe, add urad dal, cinnamon stick fry until all it become golden color then add curry leaves, turmeric powder, asafetida and fry for some more seconds.
5. Finally add the mixture we prepared earlier and provide a better toss so that ingredients will combine well and cook for one minute.
6. Adjust the salt in food, turn off the flame and serve it hot!!
