There are variety of traditional dishes are available in Tamilnadu and it will vary depending on the regional areas and in district wise. Some of the dishes are wide across the state among them masala dosa is one of the dish which is very famous across the state and it spreads towards in neighboring states too. Masala dosa is prepared in two step of preparation and it is explained in detailed manner here.
(i) Preparation of dosa
Ingredients required
· Three cups of boiled rice (Soak it for minimum of 8 hours)
· One and half cup of black gram (Soak it for one hour)
· Small amount of oil
· Salt as per your taste
Preparation methods
1. Grind the rice and dhal separately after soaking it overnight while grinding add some methi seeds in order to get the dosa in golden brown color. After grinding keep it undisturbed until it gets fragmented.
2. If it is fragmented then add some more salt and little water in it then heat the dosa pan pour the batter on the pan and spread it in thin layer in circular form.
3. Immediately you need to turn around the flour if it seems to be cooked that side. You can take it out when you see both side of the batter or cooked and stuff the masala and serve it hot!!
(i) Preparation of masala
Ingredients required
· 3-4 potatoes boiled & smashed.
· Two chopped onions
· 3-4 Green chilly
· Small piece of ginger
· 3-4 cloves of Garlic
· 6-8 Curry leaves
· One teaspoon of Mustard seeds
· 1/2 tsp Turmeric powder
· Salt as per your taste
· Little amount of Water
Preparation methods
1. Heat the oil in a pan, add the mustard seed when it splits add the ginger garlic paste, and consecutively add onions, green chilies in it.
2. Fry these materials deeply by adding the turmeric powder salt in it. Then add the boiled potatoes, curry leaves and little amount of water in it.
3. Cover the pan with a lid for few minutes when all the water getting dried then take it out and stuff it inside the dosa. Serve it with chutney or south Indian spicy sambar!!
