The chettinad recipes are world famous because of its delicious taste and smell. The most important is non vegetarian foods from chettinad are mouth watery in this line now you can see a chettinad chicken curry. Last Sunday I prepared this recipe and get applause from members. Here I penned my recipes details, make use of it and you too try it in your home.
Ingredients required
· Chicken ¼ kg
· Onion 2 (sliced)
· Tomato 1 or ½ (sliced)
· Ginger small pieces (little amount)
· Grated ginger garlic paste
· 2 Cloves for aroma (or cinnamon)
· Red chille powder ( as per you spicy taste)
· Little mustard for roasting
· Mint leaves 4-5
· Curry leaves 2-3
· One cup of water
· Chicken masala ( if required)
· Salt as per taste
· Kesar (if required)
For marinate
· Curd ¼ cup
· Small amount of chille powder
· Bit of turmeric powder
· Salt (required for chicken)
Masala preparation
· Cumin seed
· Pepper 2-4
· Coconut sliced (small amount)
· Red chillies 3-4
· Clove 1
Preparation direction
(i) For marinating
Clean your chicken and take it a bowl add some curd, salt, turmeric powder and chiller powder. Keep it undisturbed for at least 20 minutes. This steps help chicken to be soft and good to cook.
(ii) Masala preparation
Heats the pan, add some oil add cloves, cumin seed, chille and coconut and dry it deeply. It is good to add coconut at last.
(iii) Main preparation of dish
1. Heat some oil in a pan, add some mustard seed after it get splitters, and add cloves and it should be roasted then add ginger garlic paste.
2. If you feel the aromatic smell then add curry leaves meanwhile add onion and fry it until color changes. Then add tomato in it and fry it for some time.
3. Then add the masala which you are prepared, if need you can also add some chicken masala powder then add chille powder as per your spiciness.
4. Then add the marinated chicken into it cook for some time, meanwhile mix the chicken well when it is in pan. If you need, you can add kesar at this time.
5. Now add some water into it and close the pan. When water the water shrinks then you can off the stove. Remember your dish should be dry. Now add the mint leaves for decoration over it and serve it hot.
