Ingredient required
· Three cups of ridge gourd, cut into cubes
· Finely chopped 1 1/2 cups of onions
· Finely chopped 1 cup of tomatoes
· Grated 1/2-inch piece ginger
· 1 tsp of chana masala
· 1/4 tsp of red chilli powder
· 1 tsp of cumin seeds
· 1/4 tsp of turmeric powder
· 2 tsp of cilantro, chopped
· 1 1/2 tsp of dalia powder or rice flour
· Salt as per your taste
· 3-4 tsp of vegetable oil
Directions to cook
1. Initially you need to have heat the shallow pan, add some cumin seeds in it. Fry until it become brown color and start adding onion and salt. Fry until it become brown.
2. Now add some tomatoes and fry it for at least two minutes.
3. Now add channa masala, red chilli powder and turmeric powder and let it for one minute.
4. Add ridge gourd pieces with additional salt and 1 ¼ cup of water.
5. After doing all these, cover the gourd masala on pieces. The gravy has to become thick, while thickening add some rice powder.
6. Cook until raw flavor disappears. When it become thick let off the stove and garnishes it with chopped cilantro. It can be served with rice and chapattis.
