Pani Puri is also known as Gael Gappa and is one of the snack foods in India. Pani represents water, whereas Puri represents Indian bread. This snack item is found at almost all the restaurants and at street food center. Now this dish has become popular across the country and it is mostly preferred by kids and teens.
Ingredients:
· Maida – 250 grams
· Sooji – 100 grams
· Baking soda and salt – a pinch
· Oil for deep frying
· Potato – 3 (boiled)
· Peas – 1 cup (half boiled)
· Coriander leaves
· Mint leaves
· Green chilies – 4 (as per your spicy taste)
· Water (for preparing dough)
Step By Step Instruction:
For Making Puri:
1. Take a large bowl and add sooji, Maida, salt and baking soda and mix it well. Then add warm water little by little, to this mixture and knead stiff dough.
2. The stiffness should be similar to that of the Puri’s. Cover the dough with a damp muslin cloth to prevent it from going dry and keep it aside for about 30 minutes.
3. Then make small balls similar to the size of a lemon. However, you should cover the dough with muslin cloth even while making balls.
4. Using some dry Maida, roll out some thin rotis. Make some round rotis using a round cookie cutter or using any lid container.
5. Heat the pan with oil and before frying the Puri, make sure, whether is the oil is hot enough otherwise, there are chances for the Puri’s to get soaked in excess of oil.
6. Fry 3 to 4 Puri’s at a time and turn it up and down using a slotted spoon. While frying Puri, you should press them on the center so that they become puffy.
7. Once if it becomes a light brown color, you can take them out and store it in an airtight container.
For Making Pani:
1. Grind coriander, green chilies and mint leaves in a hand blender for making a fine taste.
2. Then mix the entire ingredients of the pani with the green paste. Dissolve it properly and adjust the tanginess and spices as per your preferred taste.
3. Strain through the wire strainer for removing any remains. Store it in the refrigerator for 2 to 3 hours before serving.
For Doing Stuff:
1. Take a bowl and mix yellow peas, boiled and mashed potatoes and salt. Then keep the mixture aside.
2. While serving makes a small hole by tapping slowly on the Puri on its crisp side. Stuff the fillings through the hole made on the Puri. Add tamarind chutney, green chutney and chilled pani.
