Ingredients required
· Melted butter (for greasing)
· Dried mixed fruit - 375g
· Cherries, dried figs, dried pears, dried cranberries, pitted dried dates – Each 75g (chopped)
· Grated orange rind – 2 tbsp
· Orange juice – 1 cup
· Brandy - 1/3 cup
· Plain flour - 1 cup
· Self-raising flour - 1 cup
· Baking soda – 1 tsp
· Cinnamon powder – 1tsp
· Nutmeg powder - 1tsp
· Brown sugar – 1cup
· Eggs – 3
· Custard ice-cream
Preparation methods
1. Initially you need to grease the pudding pan and line it with baking paper.
2. Now combine all fruits, dried fruits, cranberries, dates, pears, orange rind and juice in a saucepan. Cook for 10 minutes and cool it for 30 minutes.
3. Now add brandy over it and combine it well. Again add flour, baking soda, nutmeg powder, fruit mixture, eggs, brown sugar and butter.
4. Combine it until you get thick batter consistency; now shift it to the pudding basin.
5. Then place the pudding basin on the saucepan, pour enough water in it. Cooking it for 5 hours, if you need more water then add it.
6. After the time completed, you can remove the basin and serve it by adding custard ice cream on the top.
